The Ranch
Rico Land and Cattle Co. is a small cow-calf operation in the Wet Mountain Valley near Westcliffe, Colorado, run by Kevin Kaveney. The cattle graze valley pasture beneath the Sangre de Cristo range. Choose grass-fed beef that stays on pasture to the end, or grain-finished for more marbling. Either way it is sold direct — from our place to your freezer.

Questions
It's the weight of the carcass after harvest, before cutting and aging. Take-home weight is usually about 60–65% of hanging weight.
All our cattle are raised on grass. Grass-fed beef stays on pasture to the end: leaner, with a deeper flavor. Grain-finished beef gets grain for the last stretch: more marbling and a milder, richer taste. Pick one on your request, or tell us you are not sure and we will help.
Plan on roughly 1 cubic foot for every 25–30 lb of cut beef. A quarter fits in a 5 cu ft chest freezer.
