Rico Land and Cattle Co. is a small cow-calf operation in the Wet Mountain Valley near Westcliffe, Colorado, run by Kevin Kaveney. The cattle graze valley pasture beneath the Sangre de Cristo range, and the beef is sold direct — from our place to your freezer.

We keep it simple: send a request, we call you, we work out the details together.

Questions

Buying beef direct.

What does hanging weight mean?

It's the weight of the carcass after harvest, before cutting and aging. Take-home weight is usually about 60–65% of hanging weight.

How much freezer space do I need?

Plan on roughly 1 cubic foot for every 25–30 lb of cut beef. A quarter fits in a 5 cu ft chest freezer.

Do I pay now?

No. Send a request and we'll confirm price and availability with you first. A deposit holds your share once you're ready.

Can I choose my cuts?

Yes, on whole and half shares. We'll walk you through the cut sheet with the processor.
